What to wear with khaki pants while traveling?

I am traveling to New York City in November, Italy in December, and Thailand in January. I’ll need to wear khakis+shirt+tie in Thailand. What I wear in NYC and Italy is up to me, and I’d still like to look nice, but I don’t want to look so nice that I look out-of-place in the touristy areas.

What sort of clothes would you suggest wearing in NYC and Italy? Should I wear khakis there, too? What sort of shirt and jacket (it’ll be chilly) should I wear? I’m planning to get a messenger bag so I don’t look stupid with a backpack :)
I will need things to be quick-dry (except the jacket) since I’m traveling light and will likely be washing my own clothes.
